WHere is a simplified interpretation of a beverage from the seasonal drinks list. This is a large-volume prepared mix that is loaded full of flavours of a holiday season, which makes it perfect for hosting a celebration. Any leftover citrus syrup to use in morning drinks, puddings, or for another batch of bikinis.

Ingredients for the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
For the Premix (makes 850ml, serving 10)
400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (see above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch
Directions
Making the Cordial: Place the listed ingredients inside a saucepan, bring to a simmer, stirring so the sugar melts. Then, remove from the stove allowing it to reach room temperature completely. Decant to a sealable bottle, cap it and store chilled, where it will keep for around one month.
Preparing the Premix: Mix every spirits and syrup in a large bottle, leave to sit for one hour, then pass it through , ideally through muslin, making it completely strained.
When ready to serve: Measure 85ml of the cocktail base into your mixing glass filled with ice, and agitate gently for a minute to chill. Filter to a cold coupe glass or equivalent, top with the cranberries and finish using a quick spritz of the essential oil above the glass.
